Charcuterie Board
A charcuterie board is a really hot idea at the moment. There are entire companies devoted to creating the perfect board for any occasion. But for your own home, it's actually really easy to throw together a quick and easy snack-type meal. Add plenty of fruit and vegetable options, a few nuts, maybe some olive oil for dipping. You can still have the unhealthier options -- the cheese and bread -- just make sure the fruits and vegetables heavily outweigh them. This option takes very little prep and is a big hit with people of all ages and preferences.
Salad
One of the easiest healthy meal options is to simply throw together a salad. Luckily, salad is more than the typical lettuce and tomato. You can fill a salad with all kinds of delicious goodies. Add your favorite fruit options for a blast of flavor. Add veggies like cucumber, bell pepper, and carrots for more nutritional impact. Add nuts or seeds for a bit of crunch. Salad does not have to be boring! It can be a quick, easy, and super healthy meal that you actually enjoy.
Smoothies
Smoothies sound like a lot of work, but they're really pretty easy. The worst part is probably washing the blender when you're done! All you really need is some fruits and vegetables chopped into smaller pieces, some kind of milk or water or ice, and a protein powder (if you want it!). Throw these pieces in the blender, turn it on for just a minute or less, and you have a really quick and tasty meal that gives you a powerful nutritional punch. To save even more time, consider keeping your go-to fruits and vegetables already chopped and ready to go in the refrigerator.
