Want Intense Flavor? Roast Your Vegetables!

By Donna Stark

It's something that our parents, friends, doctors, and fitness trainers tell us over and over again. We need to add more vegetables to our diet. We know that to be true, but some of us still have trouble following through with it, don't we? And it's not because the actual act of buying those extra vegetables is hard, it's because we don't know how to cook them properly once we get home. There are plenty of ways that you can cook your vegetables, but if you are looking for the easiest and most simple option to take, turn your oven on and roast them!

Roasting Vegetables

Roasting is inexpensive, quick, and easy, but more importantly, it is also one of the healthier ways to cook your vegetables. At its bare minimum, all you need are the vegetables, a great oil, and some simple seasonings, but your flavor options really are endless. Take a look at some examples below.

  • Cauliflower - Cauliflower doesn't have to be boring anymore. Just sprinkle some parmesan cheese and Italian seasoning on top for the perfect side dish!
  • Broccoli - Eat more greens! Toss your broccoli florets with some garlic and spritz with lemon juice when they are done cooking for an intense pop of flavor.
  • Red potatoes - There's nothing like the crispy skin and tender inside of roasted potatoes to satisfy your craving for french fries. Sprinkle with ranch seasoning for even more smiles at the dinner table.
  • Brussels sprouts - Think you don't like Brussels sprouts? Think again. Bake until crispy and then toss with some balsamic and honey for a delicious treat.
  • Sweet potatoes - Roasted sweet potatoes go with just about any dish, so cut some up and get them cooking! In addition to providing a tremendous amount of flavor, these little bites of sweetness also look so pretty on your plate!
  • Kale - Did you know you can roast this superfood? Just remove the leafy sections from the ribs, toss them in olive oil, and sprinkle your favorite seasonings on top. Try different flavor combinations by using salt, chili powder, roasted red pepper flakes, and cumin. Roast until you achieve your desired crispness.

Eat Your Vegetables!

There is no easier way to get the nutrition you need than to add more vegetables into your daily diet, so take advantage of what you can find at your local grocery store! And remember, you can't really go wrong with any choice you make. There isn't anything in the world that doesn't taste fantastic when you roast it!
