Why You Should Start Your Day With Squash

By Brandi Goodman

Squash is a dish more commonly enjoyed at dinnertime. It makes for a healthy veggie side dish on your plate. The vegetable packs a lot of power, with vitamins essential for eye health, healthy bones, immunity, and more. It should really be added to the breakfast menu to help you start your day off right.

Benefits of Squash

Vitamin C and antioxidants are plentiful in squash. These are ideal for fighting off toxins and preventing cancer. Start your day with plenty in the mix and you'll be boosting your health in the process. Squash can even help when you're out in the sun. The beta-carotene within it helps protect the skin.

The high fiber content can enhance your digestion and keep your stomach feeling fine. The vegetable is also a good source of calcium, iron, magnesium, and numerous other nutrients, making it more than ideal to have in your diet.

It's also low in calories. This makes it particularly ideal, because you won't be adding a ton of calories to your meal when you add it in. You can enjoy a full cup of squash with just 63 calories added. This is especially worthwhile if you're currently dieting. With limited fat and a bit of protein, squash should be on your regular ingredient list.

Breakfast Squash Recipes

You may not want a heaping helping of squash on your breakfast plate. There are plenty of breakfast recipes that use squash that are quite enjoyable. You can make breakfast cups using eggs, squash, tomatoes, and chorizo. A baked squash bowl is also ideal. Sprinkle it with cinnamon and place a Greek yogurt and some berries inside.

A butternut squash breakfast hash is another great option. For just 200 calories per serving, you'll get 12 grams of protein. This is plenty to fill you up and keep you satisfied until lunch. Squash, sausage, onion, garlic, spinach, and eggs get fried up together in a cast iron skillet to make the meal.

Try a homemade oatmeal using butternut squash. You can even make a cinna-squash smoothie. There are numerous ways to add the veggie to your breakfast and ensure you get the many vitamins and nutrients it provides.

Squash may not have been on your radar before, but it definitely should be now. Don't just think of it as yet another veggie you're instructed to eat. Create as many recipes as you can using squash and see which new favorites you can add to your regular menu choices. It's far more worthwhile to your health than you may have realized.
