The Best Fall Vegetables for Your Family

The fall is all about celebrating the harvest. The earthy vegetables that abound this time of year are delicious and very nutritious, which is why you should be taking advantage of the season’s bounty. Here are some of the best fall vegetables and a few ideas to help you master their preparation.
Acorn Squash
This vegetable can be used in sweet and savory dishes with a flavor very close to the butternut squash. That means you can use it anywhere you’d use butternut squash. Try roasting it with a little olive oil and rosemary or try sprinkling it with some brown sugar for a sweet treat; either way, you’ll get the nutritional benefits of this autumn vegetable.
Sweet Potatoes
Sweet potatoes are a common vegetable that you should take advantage of because they’re so good for you! They are full of Vitamin C and Vitamin A. One medium sweet potato has just 150 calories. If you grew up eating only sweet potato casserole loaded with sugar and marshmallows, branch out and try these orange vegetables another way. You can simply cut a sweet potato in half, and then roast it in the oven. They don’t have to be fried or fattened up to be delicious.
Brussels Sprouts
If you grew up on steamed, buttered sprouts that looked a little wilted, then try something new. No offense to your mom, but roasting Brussels sprouts helps to bring out their flavor and make them delicious. Plus, these tiny cabbages are full of protein and more Vitamin C than an orange!
Turnips
Turnips don’t get as much love as they should in the vegetable world. They happen to be rich in Vitamin A and Vitamin C, plus their green tops contain Vitamin B, iron, calcium, and manganese. They peak in the fall, but you can really find them year-round in the store. Roast them up with some other fall vegetables or use instead of white potatoes in a mash. They’re low calories, with one medium turnip only containing about 30 calories.
Pumpkin
Pumpkin is certainly one of the stars of the fall season. But you can use them for more than pie or as a decoration. They’re very versatile and good for you. Cut one open and use it just as you would any other squash. When you take the seeds out, roast them and sprinkle with a little sea salt – they’ll make a good-for-snack anytime!
