Get Your Soup On!

I used to jump on the all-things-pumpkin-spice bandwagon for years, but lately, my tastes have changed and there is something better that I look forward to when the fall season rolls around. It's got the flavor, it screams comfort, and it provides just as many feel-good feels that anything involved with pumpkin-spice could offer. And even though parts of the country haven't experienced a drop in temperature yet (like the area where I live), I can't help but to count down the days until it arrives! Want to know what it is? Well, I couldn't be more excited to announce that the fall soup season is right around the corner!
Get Your Soup On
There is nothing like a comforting, warm bowl of soup on a brisk fall day or a chilly, get-under-the-blanket kind of night. And that time of year is here! So whether it's a hearty beef stew, a vegan lentil puree, or a decadent bowl of butternut squash soup, it's time to get your soup on! Here are three perfectly good reasons to be as excited as I am when it comes to soup. Take a look.
- Soups are inexpensive - Your kids just wiped your bank account out during back-to-school shopping and when you finally recover from that, it's time to start saving for the upcoming holidays! Sure, it's stressful, but you don't need to worry about the cost of groceries when soup is on your list! Look for recipes that take advantage of the least expensive items in the grocery store, like beans, grains, and vegetables. A pot of soup can last longer than most other meals.
- Soups are adaptable - Sometimes we can't help buying too many things at the grocery store or not using all of the items we thought we needed. Don't let your food go to waste! If you bought too many carrots, chop them up and use in a chicken noodle soup. Or if you have leftover spinach as well, turn them both into a delicious minestrone. From rotisserie chicken to kidney beans to cauliflower, many of the items left behind after your meals can be turned into a bowl of goodness with just a little bit of creativity!
- Soups are nutrient-dense - Think about it. Most soups are made with rich vegetable broth or stock made by simmering bones, and just like the saying, "what happens in Vegas stays in Vegas," so do your nutrients in a pot of soup. They aren't going anywhere, so whatever you put in, you can be sure that it will enter your body!

Sometimes it feels like you need a degree in science just to make a fruit tart or a perfectly cooked steak, but the opposite can be said about soup.
