It's Hard to Beat Cauliflower as a Healthy Veggie

Eat your vegetables has become a cliche but it's one with solid truth behind it. Plant food may be the most important type of sustenance there is. Staying completely healthy is just not possible without vegetables. It is important to eat a wide variety of veggies as different types meet different nutritional needs. One of the healthier vegetables is cauliflower. It's also versatile. It can be boiled, mashed, roasted, and eaten raw. It makes a healthy rice substitute and can be made into a pizza crust. Cauliflower is an excellent food to add to your diet. Here are some reasons why.

Nutrition

Cauliflower is loaded with essential nutrients while being very low in calories. One cup of this delicious vegetable contains three grams of fiber, 20 percent of the recommended daily allowance of Vitamin K, and a whopping 77 percent of the Vitamin C allowance. It also contains smaller amounts of nearly every vitamin and mineral you need to be healthy. Eating cauliflower is almost like taking a multivitamin only better. It's got fiber and tastes good.

Fiber

The amount of fiber in cauliflower makes it very healthy in several ways. Fiber feeds the helpful bacteria in your gut, improving digestion and the absorption of nutrients. Research has found that a high fiber diet can be helpful in reducing the risk of diabetes, cancer, and heart disease. High-fiber foods also fill you up, making snacking between meals less likely. Combined with its low calorie content, this makes cauliflower an excellent food for weight loss.

Antioxidants

As a cruciferous vegetable, cauliflower contains many antioxidants which fight free radicals in the body that can attack and damage cells. Two of the antioxidants abundant in cauliflower, glucosinolates and isothiocyanates, have been found to inhibit cancer cell growth. Studies have shown these antioxidants to be particularly effective at fighting colon, prostate, breast, and lung cancer. Vitamin C is another antioxidant that cauliflower is rich in. This nutrient is very helpful to immune system health and fighting illness.

Choline

Choline is a lesser known nutrient that many people do not get enough of. Cauliflower is an excellent source of choline, which aids a number of important functions. Choline is essential to helping support metabolism as well as sustaining the integrity of cell membranes. Another vital function aided by choline is the synthesizing of DNA.

There is a large variety of vegetables available and they all have nutrition and health benefits. One of the best is cauliflower. If you are not already eating this healthy veggie, consider adding it to your diet. It can greatly improve your overall health.
