Benefiting from Green Vegetables in March

March offers many in-season vegetables. Enjoying these options can help you boost your health. They provide plenty of vitamins and nutrients that make them worthwhile to consume on a regular basis. Many of the in-season options during the month of March include green vegetables.

Artichokes

Artichokes pack a lot of fiber. Just a medium-sized version contains 6 grams. The vegetable also contains a large amount of protein, which is usually unheard of, with 4 grams provided. Vitamin C, Vitamin K, folate, and Vitamin B6 are also plentiful in artichokes. The prebiotic compounds, antioxidants, and vitamins work together to make artichokes a worthwhile meal addition. They can lower levels of bad cholesterol, regulate blood pressure, and even improve liver health. 

Cabbage

Low in calories, cabbage can be added to a meal without worry. You can enjoy a full cup and add only 22 calories to your daily count. Broccoli

Vitamin K and Vitamin C are also found in broccoli. Get more than 80 milligrams of Vitamin C in a full cup of the vegetable. Protein is also higher in this veggie than most, with 2.6 grams available. Just 31 calories are added per cup, making broccoli something you can enjoy with a meal or as a healthy snack. Skip the fattening cheese and use some spices to enhance the flavor. 

Brussels Sprouts

Brussels sprouts provide antioxidants, fiber, vitamins, and even omega-3 fatty acids. With the ability to ward off cancer, maintain healthy blood sugar levels, and fight inflammation, this vegetable should be a top priority on your list of foods to eat more often. They even offer 137 percent of the daily needed value of Vitamin K. Try them cooked different ways and with different seasonings until you find an option that tastes right to you.
