How You Can Eat More Vegetables

Some days you feel as if you could be the poster child for nutritious eating and good health. Other days, you lay in bed all day and see if you can eat a bagel without using your hands. Everyone's been there. But if you're someone who struggles with getting the right amount of vegetables in your diet each and every day, then there are things you can do that don't take a lot of effort to squeeze some more in. Here are some tips to make your diet a little more plant-forward.

Check Out the Local Markets

Many cities and towns have farmers markets. Begin going to them so you can check out what is growing locally and in season. Ask questions about vegetables you may not be familiar with and ask the seller how they would recommend preparing them.

If there's no market near you, then go to your local grocery store and try to find something inspiring and new. Make it your goal to try one new thing each week -- you may find something you absolutely love that you had no idea existed!

Write It Down

You need a vegetable diary. Get a notebook and write down the vegetables you eat each day. That way, you can see what your current habits are and work to change them. This isn't about counting calories or anything else, it's simply about holding yourself accountable for your vegetable intake. If you notice you're lagging behind, you can take action to improve.

Put It in a Smoothie

An easy way to get more vegetables in your diet is to throw some in a smoothie. That way you can pair them with flavors you know you love such as berries or tropical fruits to up your veggie intake. Try pairing zucchini or cauliflower with bananas, almond milk, and a little cocoa powder to create a chocolate smoothie you won't soon forget.

Have Raw Vegetables on Hand

You can't eat what you don't have, so stock your refrigerator with raw vegetables so you always have something you can grab on the go or throw onto your dinner plate. Challenge yourself for a week to only have snacks that are plant-based and notice how it makes you feel. Easy and delicious!
