Recipes Featuring Healthy, Delicious Eggs

Eggs are a staple in most kitchens. There are usually a dozen or so in the refrigerator. They're easy to cook up for breakfast and are used in baking and for breading various other foods. But there are a variety of recipes that feature eggs for any meal. Eggs are delicious no matter how they're cooked and they are also a nutritious source of protein with several health benefits. Here are some of those benefits and also some ways to enjoy a tasty egg dish.

A standard serving is two large eggs and that serving contains 13 grams of protein, essential for building muscle and other body tissues and providing essential amino acids. Eggs also contain Vitamins A, B12, D, and E as well as folate, iron, selenium, and choline. An egg meal is filling and the protein slows digestion which can help keep you from snacking between meals and overeating. Eggs also contain the antioxidants lutein and zeaxanthin. These compounds fight free radicals in the body that attack cells and can cause chronic diseases like cancer.
Taco Breakfast Skillet
A hearty breakfast is a great way to start the day. Frying up some eggs in a pan with potatoes, avocados, zucchini, and corn is a delicious and very healthy meal. Add taco seasoning and maybe a bit of salt to give it some Mexican heat and flair. You can serve it over toast or in tortillas.

Shakshuka
Shakshuka is a Mediterranean dish that is made with eggs, tomatoes, and peppers and spiced with paprika and cumin. There are many variations that use different vegetables and even cheese. It's very easy to make, delicious, and you can make the variety that most appeals to you. It is a great dish for vegetarians. You get the health benefits of the eggs plus the tomatoes and veggies. It's for breakfast, lunch, or dinner.
Brussels Sprout Sweet Potato Hash
Hashes are easy to make and pair really well with eggs. Brussels sprouts and sweet potatoes are both healthy and add a nice flavor and texture to this dish. Add some bleu cheese for more nutrition and a tangy flavor.
When it comes to foods that taste good, are readily available, and healthy, it's hard to beat eggs. With so many different recipes that include them, you could eat eggs every day and never get bored.
