Spring Can be Soup-er!

You longed for the sight of spring flowers and now you wake up with a smile from ear to ear because the warmer weather has finally arrived. Springtime is one of the best times of the year and even though we are glad to move on from the cold weather, there is one winter mainstay that should definitely be carried over to spring. No, it's not your winter parka or those well-worn snow boots (you can keep those tucked away in the closet), it's that warm bowl of soup that saved you from turning into ice on those blustery winter nights.

Soup in Spring?

Just when you thought it was safe to put winter away, you are now being told to keep those soup bowls handy. Do you want to know why? Well, it's soon time to hit the farmers markets and to lighten your meals, and one of the easiest ways to transition to a fresher and more vegetable-based diet is with a bowl of soup! Check it out.

  • Add more veggies - Soup is a perfect way to incorporate more vegetables to your diet. Fresh, canned, or frozen, you can add any vegetables to your delicious homemade broth and come up with a light meal that is extremely healthy and filling! Obviously, frozen and canned vegetables are easier to store, but nothing beats the fresh-from-the-field vegetables you can pick up at your local market.
  • Retain those nutrients - Sometimes, during certain cooking processes, valuable nutrients are lost. But whatever you put into your soup pot, you can be sure that all of the vitamins and minerals will stay! Kind of like, "What happens in Vegas, stays in Vegas," but with soup. What gets thrown in your soup, stays in your soup!
  • Hide what is hated - Do your kids hate broccoli? If there is a vegetable that is disliked in your family but you know it offers plenty of health benefits, why not hide it in your soup? Try using an immersion blender and turn your chunky soup into a creamy one. Then hand that bowl over to your kids ... your secret is safe with me!
  • Cut those calories - It's easy to cut calories by having a cup of broth-based soup before a meal. In addition to helping you eat less during your main meal, it is also a great way to stay hydrated! Just be sure to avoid cream-based soups as they may have more calories than you bargained for!
