Getting Those Veggies Into Your Family's Diet!

The scrunched-up nose, the pretend gagging sounds, the pushing away of the plate. It happens at every meal when the vegetables are placed on the table, only it's not just our children who are acting this way ... plenty of adults exhibit these behaviors, too! We all know we need to be eating more veggies, and some of us actually do like them, but what about the ones who can't stomach the thought of eating those "green things" sitting right in front of them? If you are the head chef in your family and are tired of serving onion rings and tater tots to your loved ones, keep reading! There are plenty of ways you can sneak some actual vegetables into everyone's diet!

Getting Creative in the Kitchen

There is nothing worse than knowing what is good for your family and having them fight you every step of the way to getting it. Fortunately, that's an easy fix, but you may have to tap into your creative side to do so. Here are some tips on how to get started.

  • Shred it - Go ahead and grab your grater or pull your food processor out of the cabinets. It's time to start shredding! You can easily add an entire serving of vegetables to your favorite whole-grain muffins or breads by incorporating shredded zucchini into the batter. You can also shred carrots or summer squash into your homemade spaghetti sauce too. The options are endless!
  • Chop it - When you finely chop veggies and add them into your recipes, most people won't even notice, so pull out that knife and get chopping! Add some finely chopped mushrooms to your meatballs or burgers or chop some bell peppers into your chili and pasta sauces.
  • Puree it - Chocolate can mask many different vegetables, so try adding a pureed sweet potato into your brownie mix or add carrot puree to your favorite chocolate chip cookie recipe. You can also spread a spinach puree onto your pizza dough before the sauce for an added boost of nutrients.
  • Smooth it - Just like chocolate, smoothies are a great way to hide those vegetables your family refuses to eat, so put your blender to work today! Add in greens, avocado, or just about any other vegetable you could think of. Just keep in mind that it often helps the blending if some of the harder vegetables are cooked first.

Don't feel bad about "deceiving" your family when you hand them that delicious smoothie in the morning. After all, if they wouldn't put up such a fight, you wouldn't have to resort to such measures, right? And at the end of the day, they will all be healthier for it!
