Soup for Spring? You Bet!

By Donna Stark

The transition between winter and spring isn't necessarily hard, but it may be confusing for some when it comes time to go grocery shopping. And it's confusing because one day may be warm and beautiful, the next day may be rainy and dreary, and the day after that could be as cold as some of the days we had during winter. And all of this up and down, and back and forth, can make meal planning difficult. Do you plan for the standard lighter and fresher meals of the season or should you continue to stick to a few of the heartier ones from months past? Well, an easy way to get around that is to help yourself to a bowl of soup. That's right. Soup is the perfect transition meal between winter and spring. Here's why.

Light and Filling

Are you looking for a meal that is light but also filling at the same time? If so, you need to hit the farmers market and load up on the seasonal vegetables that are filling the stands. After you do that, head back home and make yourself a delicious vegetable-based soup for the family. It's a great way to improve your family's overall health and wellness because the number of vitamins, minerals, and nutrients you can add to the pot is as endless as the number of vegetables you have to choose from. And when you add some crusty bread and a side salad? Well, you've just created the perfect meal!

Warm and Cozy

Even though the spring breezes may be warm during the day, there is still a chance they will chill down during the night, and a bowl of soup or a cup of chili will definitely hit the spot. Luckily, it is easy to keep supplies on hand if that drop in temperature suddenly occurs. Broth, canned beans, and frozen vegetables can be stored for months, but within minutes, can easily be turned into a meal!

Nothing Better Than Soup!

The transition between winter and spring may make it confusing when you are deciding what to wear each day, but it doesn't need to confuse you in the kitchen. Just remember, if we didn't experience the hardships that come with winter, we certainly wouldn't be able to enjoy the beauty that comes with spring. So, go ahead and embrace those few days of uncertainty, and then head to the kitchen so you can embrace that delicious bowl of soup waiting for you on the table.
