Quick Healthy Breakfast Ideas
By Randi Morse
There are some people who are wide awake when they wake up. These are the people who don't need coffee to get going, the ones who wake up ready to start their day. Then there are people like me. I have to drag myself out of bed every morning, which makes creating a healthy breakfast seem more like a chore than it should be. Having a healthy breakfast is a great way to start the day, so here are some quick, easy, healthy breakfast options.
Pressure Cookers
Pressure cookers have become all the rage again, and I, for one, am extremely glad. They make it easy to create delicious, home-cooked meals even if you're pressed for time. If you're looking for a healthy breakfast option, why not make pressure cooker steel cut oats? This is a simple recipe that enables you to make homemade oatmeal in a fraction of the time it would take to make it on the stove. You can make a big batch on Sunday, refrigerate it, then use the microwave to heat it up. It should stay fresh in your refrigerator for up to five days.
Meal Prep
Meal prepping has become very popular, and for good reason. Prepping meals ahead of time makes it much easier to get healthy meals without having to stress about cooking or trying to figure out what you're going to eat. Try putting together a protein box for your weekly breakfasts. You can fill it with things like cottage cheese, boiled eggs, and nuts. Add fresh fruit and you'll have a deliciously tasty breakfast.
Microwave Egg Cups
If you prefer something hot in the morning, there are a number of microwavable egg cup recipes you can find online. This microwave egg caprese recipe pairs sliced deli ham with pesto, tomato, and eggs. In less than two minutes you'll have a hot, fresh bowl of egg caprese.
For the Sweet Tooth
Like sweet things in the morning? Try a recipe like these blueberry pancake bites. These muffins can be made ahead of time and warmed up in the microwave very quickly in the morning. If you're really in a hurry, you can just grab a few of them as you head out the door.
Breakfast is an important meal and with a little planning you'll find that you're able to create delicious dishes that fill you up and give you nutrients without making you spend all morning slaving over the stove.
