One of the most common herbs used in making a rub or in a marinade for meats is coriander -- derived from the Coriandrum sativum plant. Coriander is an herb widely used in Indian, Middle Eastern, and Asian dishes to add flavor to them. In the United States, it's also used as a flavor enhancer as well as other food uses. 

You may not be aware, but the leaves from the Coriandrum sativum plant are actually called cilantro, while the seeds (crushed or whole) are actually coriander used in cooking. Cilantro is used in a lot of Mexican dishes here in the USA and in Mexico.
