Get Creative With Your Leftovers

By Donna Stark

Do you ever go a little crazy in the kitchen and end up cooking more than you can eat in one meal? Although it is not always a bad thing to have happen, it does present a problem that eventually needs to be dealt with ... leftovers, and what you are going to do with them. Now, if you don't mind eating the exact same thing over and over, the solution to this issue is pretty easy to solve. But if you prefer variety with your meals or if you don't have enough left over for a full meal, you may need to figure out something else.

Using Your Leftovers

For those of us who hate to see good food go to waste or for the busier than ever workaholic, leftovers are great and can often be a lifesaver. Having them in the house means that you don't have to cook as often and that meals can be ready in just a few short minutes. However, it can sometimes be difficult to come up with new ideas on how to use them. Here are some suggestions for the next time you find yourself staring at those leftovers in the refrigerator.

  • Kabobs - Kabobs are the perfect way to use any leftover beef or chicken that you may have. With just a few pieces of protein and a variety of vegetables, you can build a quick and easy meal. Toss up a delicious salad to round it off and your evening is made!
  • Pizza - The best thing about homemade pizza is that you can put just about anything on it, and with so many stores now offering premade dough, it couldn't be any easier. So grab your leftover chicken, bacon, and vegetables and start tossing that pizza pie!
  • Tacos - Tacos are another quick and tasty meal that you can use just about anything with. Beef, chicken, fish, and beans ... it doesn't really matter because they can all work! Just pick your favorite toppings and start creating!
  • Omelets - Don't restrict those leftovers for dinner only, use them the very next morning and start your day off right with a healthy and substantial breakfast! Eggs are the perfect foundation for most flavors and an omelet just takes minutes to cook. Add your favorite cup of juice or coffee to the meal and your day is set!

Easy Meals for a Busy Week

Don't panic if you end up cooking too much food. Leftovers are a great way to continue eating healthily while reducing your time in the kitchen. Just pack it all up and save it for the delicious meal you are going to create the very next day.
